Why Meat Cannot Be Water-Bath Canned

Water-bath canning works for high-acid foods — fruit, pickles, jams — because Clostridium botulinum cannot grow below pH 4.6. Acidity does the safety work; the boiling water just seals and pasteurises.

Meat has a pH well above 4.6. There is no acid barrier, so the only thing standing between you and botulism is heat sufficient to destroy the spores themselves.

Botulinum spores survive boiling. A water bath reaches 212°F at sea level and holds there no matter how long you boil. Spores require around 240°F to be destroyed reliably, and the only way to reach that temperature in a home kitchen is under pressure.

This is not a matter of caution or preference. It is the reason pressure canners exist.

The Numbers

10 PSI in a weighted-gauge canner, or 11 PSI dial-gauge, at sea level, adjusted upward for altitude. Above 1,000 feet the pressure must increase, because water boils cooler as elevation rises and pressure alone determines the temperature reached.

Processing times depend on the meat, the jar size and whether it is raw-packed or hot-packed — commonly around 75 minutes for pints and 90 minutes for quarts. Use a current tested recipe for the specific food and jar size from the USDA Complete Guide to Home Canning or your state extension service. Do not scale times, do not interpolate between recipes, and do not use a family recipe from before the tested times were established.

Times are not adjusted for altitude. Pressure is.

What Goes Wrong

Dial gauges drift. A dial-gauge canner should be tested annually — most county extension offices do this free or cheaply. A gauge reading 11 while delivering 8 is invisible and dangerous. Weighted gauges do not drift, which is why many people prefer them.

Venting gets skipped. The canner must vent a steady stream of steam for a full ten minutes before the weight goes on. Trapped air lowers the actual temperature inside at any given pressure reading, so an unvented canner can show the right number and be too cool.

Cooling gets rushed. Let pressure fall to zero naturally. Running the canner under cold water or lifting the weight early causes siphoning, seal failure and, at worst, a violent release.

Fat on the sealing surface. Meat is fatty, and fat on a jar rim prevents sealing. Wipe rims with a cloth dampened in hot water or vinegar before fitting lids.

Signs Of A Failed Jar

Discard, without tasting, any jar that: has an unsealed or bulging lid, spurts liquid when opened, smells wrong, shows unusual cloudiness or rising bubbles, or has a lid that flexes.

Botulinum toxin does not reliably announce itself by smell or appearance, which is why the response to a suspect jar is disposal rather than judgement. Do not taste to check. If you must dispose of a suspect jar, handle it carefully and detoxify it by boiling as described in the USDA guide rather than simply binning it where an animal could reach it.

Where We Are Honest

Home-canned foods are the leading cause of foodborne botulism cases in the United States, and low-acid vegetables and meats put up without a pressure canner are the recurring pattern. This is not a theoretical risk maintained by over-cautious agencies; it is a small number of real, severe cases every year, and they cluster around exactly this mistake.

Pressure canning meat is genuinely safe when done to tested times and pressures. The safety comes entirely from following a current tested recipe, not from experience or instinct, and this guide is an orientation to the principles rather than a substitute for that recipe.

Common Questions

Can I pressure can in an electric multi-cooker?

Only if the specific model is explicitly approved for pressure canning by its manufacturer. Most are not, they do not reliably reach and hold the required temperature, and a "canning" button is not the same as validation.

Do I need to adjust for altitude?

Yes — increase the pressure per the tested chart for your elevation. Time stays as written.

Can I reuse lids?

Not standard single-use flat lids; the sealing compound is spent. Reusable systems designed for repeated use are a different product with their own instructions.

Is it safe to can dairy or thickened sauces?

There are no tested processes for most dairy, and flour or cornstarch thickeners interfere with heat penetration. Stick to what has a tested process.
