What It Is

Two distinct canning methods. Water bath processes jars in boiling water at 100°C. Pressure canning uses a sealed vessel to reach roughly 116°C. They are not interchangeable and the choice is determined by the food, not by preference.

How It Works

Clostridium botulinum spores survive boiling water. They cannot grow in high-acid environments, so acidic foods are safe at 100°C. In low-acid foods the spores can germinate and produce botulinum toxin, and only pressure canning reaches a temperature that destroys them.

Water bath: fruit, jams, jellies, pickles, tomatoes with added acid, chutneys. Pressure canning: all vegetables, meat, poultry, fish, stocks, soups, beans and anything mixed.

Follow a tested recipe from a current, reputable source — not a family recipe of unknown origin, and not a blog. Adjust processing time for altitude. Check seals after 24 hours and refrigerate anything unsealed.

Safety & Cautions

This is the one area on this site where an error can kill someone. Botulism is often fatal and the toxin is undetectable — no smell, no taste, no bulging in every case. NEVER water bath low-acid food. Never invent or scale a recipe. Discard any jar that is unsealed, leaking, cloudy or off-smelling without tasting it.
