Two Different Processes
People conflate these constantly. Curing preserves — salt draws out water and makes the meat inhospitable to bacteria. Smoking flavours, and depending on temperature it may or may not cook.
You can cure without smoking. You can smoke without curing, but for anything held at low temperature you should not, and the reason is botulism: smoking at low heat creates a warm, low-oxygen, low-acid environment, which is exactly what Clostridium botulinum wants.
Salt
Salt does the preservation work by reducing water activity. The percentages matter, and weighing is the only reliable method — volume measures of salt vary enormously between coarse and fine crystals.
Equilibrium curing is the approachable method: weigh the meat, calculate salt as a percentage of that weight, apply all of it, and let it sit sealed until the salt distributes evenly. Typically 2–3% salt by weight. Its advantage is that it is self-limiting — the meat cannot get saltier than the amount you added, so timing is forgiving.
Salt-box curing, burying meat in salt, is traditional and less predictable, and depends on knowing when to pull it.
Nitrite: The Part People Get Wrong
Curing salts containing sodium nitrite exist specifically to prevent Clostridium botulinum in cured meats. They also produce the pink colour and the characteristic cured flavour, but colour is a side effect, not the purpose.
Prague Powder #1 (also sold as pink salt, curing salt #1, Insta Cure #1) is 6.25% sodium nitrite in salt, dyed pink so it cannot be mistaken for table salt. It is for anything that will be cooked or smoked and eaten relatively soon — bacon, ham, sausage.
Prague Powder #2 contains nitrite plus nitrate, which converts slowly to nitrite over time. It is for long-dried products that hang for months, where protection must persist.
They are not interchangeable, and the quantities are not approximate. Nitrite is toxic in excess. Follow the specified rate for the product exactly — typically around 0.25% of meat weight for #1 — and weigh it on a scale accurate to a tenth of a gram.
The pink dye exists because people have killed themselves mistaking curing salt for table salt. Store it labelled and separately.
Hot Smoking Versus Cold Smoking
Hot smoking runs around 165–250°F and cooks the meat while flavouring it. The product is done when it reaches a safe internal temperature and it is stored like any cooked food. This is the low-risk approach.
Cold smoking runs below about 90°F and does not cook anything. It sits squarely in the bacterial growth range for extended periods, which is why cold-smoked products must be properly cured first. Cold smoking uncured meat is genuinely dangerous, not merely inadvisable.
Wood
Hardwoods only. Never softwoods — pine, fir, spruce — whose resins produce acrid smoke and unpleasant compounds. Never treated, painted or reclaimed construction timber.
Oak and hickory are strong; apple, cherry and maple are mild and sweet; mesquite is very strong and easy to overdo. Wood choice is a flavour decision and has nothing to do with safety.
Where We Are Honest
Home curing sits at the intersection of an old craft and a real microbiological hazard, and much of what circulates online is confident and wrong — particularly around omitting nitrite for "natural" curing. Celery powder cures are still nitrite cures; the nitrite is simply from a vegetable source, and it is not measurable in the same way, which makes them harder to use safely rather than easier.
Use a tested recipe with weighed percentages, use a scale, and start with hot-smoked products. Dry-cured whole muscle and fermented salami are genuinely rewarding and are advanced work with a real margin for error, best learned from a dedicated text rather than a web page.

Common Questions
Can I cure without nitrite?
For products cooked promptly and refrigerated, salt alone works. For cold-smoked or long-held products, nitrite is doing a specific safety job and omitting it is a real risk.
Is nitrite dangerous?
In the quantities used in proper curing, the safety consensus is that it is acceptable, and the amounts are small compared with those in many vegetables. In excess it is genuinely toxic, which is why weighing matters.
How long does home-cured bacon keep?
Refrigerated, one to two weeks; frozen, several months. Home curing at these salt levels is a flavour and preservation aid, not shelf stability.
What internal temperature for hot-smoked poultry?
165°F, measured in the thickest part, same as any cooked poultry. Smoke does not change the requirement.
