The Three Numbers
Chicken eggs take twenty-one days. The whole process turns on three variables, and almost every failed hatch traces back to one of them.
Temperature. 99.5°F in a forced-air incubator with a fan; around 101.5°F measured at the top of the egg in a still-air incubator, because still air stratifies. This is the least forgiving variable. A few hours significantly high is worse than a few hours low — high temperature kills outright, low temperature mostly delays.
Humidity. Roughly 45–55% relative humidity for the first eighteen days, raised to 65–75% for the final three. The numbers matter less than what they are for, which is controlling how much water the egg loses.
Turning. Three to five times daily, an odd number so the egg does not spend every night on the same side, until day eighteen. Then stop.
What Humidity Is Actually Doing
An egg must lose water through its shell during incubation — roughly 11–13% of its starting weight by day eighteen. That evaporation creates the air cell the chick breathes from before it breaks the shell.
Too much humidity and the egg loses too little water. The air cell stays small, the chick has nowhere to draw its first breath, and it drowns in its own fluid at the point of internal pipping. This is the most common cause of fully formed chicks dying at day nineteen or twenty, and it is why hatching failures so often look like a sudden late catastrophe when the cause was set weeks earlier.
Too little humidity and the chick becomes shrink-wrapped against the membrane and cannot turn to cut its way out.
The reliable way to manage this is to weigh the eggs rather than chase a humidity reading. Weigh a sample at set, then at day seven, fourteen and eighteen. Track toward that 11–13% total loss and adjust humidity up or down to steer it. Hygrometers drift; a scale does not.
Lockdown
On day eighteen: stop turning, raise humidity, and stop opening the incubator. The chick has positioned itself and is about to internally pip into the air cell. Opening the lid at this stage drops humidity sharply and is exactly what shrink-wraps a chick to its membrane.
Hatching takes longer than people expect. Twenty-four hours between the first external pip and a chick fully out is entirely normal. Leave it alone.
Candling
Candle at day seven and day fourteen. At seven days a developing embryo shows a dark spot with visible blood vessels radiating out — the classic spider shape. Clear eggs were never fertile, or quit very early. A distinct blood ring means it started and stopped.
Remove clears and quitters. A rotting egg can burst and contaminate an entire tray, and the smell is unmistakable.
Should You Help?
This is genuinely contested. A chick that cannot get out on its own frequently has something wrong with it — malposition, weakness, an unabsorbed yolk sac. Assisting can save a bird, and it can also produce a chick that dies slowly two days later, or bleeds out because the membrane blood supply had not receded.
The defensible middle ground: do not intervene before at least twenty-four hours have passed since external pip, and if you do, work slowly, moisten the membrane, and stop immediately at any sign of blood.
Broody Hen Versus Incubator
A broody hen manages temperature, humidity and turning better than most machines, needs no electricity, and raises the chicks afterwards. She also decides her own schedule, may abandon the clutch, and limits you to what she can cover.
An incubator gives you control and volume, and demands that you supply everything she would have done. Neither is better in general. If you have a reliably broody breed and want a dozen chicks, the hen is less work and usually hatches better.
Where We Are Honest
Hatch rates well below 100% are normal, including for experienced keepers with good equipment. Shipped eggs hatch notably worse than eggs collected on site, because the air cells get shaken loose in transit. A 50–70% hatch on shipped eggs is a reasonable outcome, not a failure, and anyone quoting consistently higher on shipped eggs is either lucky or selective about which hatches they mention.

How should I store eggs before setting?
Pointed end down, around 55–65°F, tilted and turned daily, for no more than seven to ten days. Fertility drops off steeply after that.
Can I open the incubator to candle during lockdown?
No. That is the specific action that causes shrink-wrapping.
